Perhaps you could give him the gift of dates? Like, get two tickets to the movies, a gift certificate to your favorite restaurant, or a gift certificate to the bowling alley or aquarium, stuff it inside a picnic basket with goodies inside (the date of a picnic), and you'll enjoy your gift of dates for weeks to come.
Include a disposable camera so that you can remember all your awesome dates. Get creative, girlfriend!

Gift certificate to a store you know he would appreciate AND a gift basket of non-candy consumables that is traditional for Christmas and likely to appeal to a man: gourmet smoked meats, cheeses, crackers, salsas, nuts, etc. If your man can't figure out a way to make good use out of this combination gift, then he's not "hard to shop for" he's just LAZY :) Good luck!

Maybe try making him something cute if you are crafty, something that makes him laugh (guys love to laugh) like if you knit a crazy colored pair of socks. It doesn't have to be perfect, just something to show that you've been thinking of him. Or you could make him a book of coupons for things you wouldn't ordinarily do for him (both sweet and naughty lol. If you want to spend some dough how about paying for a studio photography session for a portrait of the two of you? Or even if you are adventurous and he is not all that jealous some professional risque pics of you with a Christmas theme! Try to be different and choose with your heart! Good luck!
