Repeat this little poem...
When in doubt
Don't be Silly
Get that Condom
On your Willy!
Why take chances that would effect your health or life for the rest of your life? You have no proof that she is sterile or STD free. Would you play Russian Roulette?

Could you please tell us how many STIs you have had? And how many STIs has she had?
Condoms aren't terribly enjoyable to use but they beat the hell out of the treatments for the various STIs you could catch. For example, I understand the removal of genital warts from the penis is no picnic.
And then theres the pain and discomfort caused by the various STIs themselves.I've also heard there's a reason it's called "clap"--it apparently comes on like a freight train and hits with a great deal of pain. I think some men actually pass out from the pain when they urinate.
And of course they don't have a cure yet for HIV/AIDS.
So could you please discuss your feelings regarding STIs?

Ask her more about it and maybe get and understand the medical reasons for why she can't have more children.
Then if you trust her, and understand the reasons why she can not have children, it's ok to go ahead.
If you're unsure if you can trust her, or want to be super careful, use condoms anyway.
But understand the medical reasons behind this! Her saying "I can't have babies" isn't enough, she needs to explain to you why this is the case.

My brother's girlfriend told him the same thing 5 years ago, they now have a 4 year old son (who is beautiful), but none the less do not believe her. Some women will say that just because they want a child or another child, so unless she has absolute medical proof in the way of reports, I would continue using protection if I was you. She may be telling the truth, but do you truly want to risk it. Good Luck.

As far as a report re her fertility goes, hmmm, maybe? I have had fertility problems inc an operation and I DO hav the documentation to go with that but I'm sure as hell that not everyone does.
It's a bit of a gamble!

Oooh! Gallons of sperm. How appetizing!
**grin**
Seriously, unless she put in your hands a doctor's report complete with STD test results and an OFFICIAL report of infertility dated within this past week, do not even consider dropping your protection.
You have no idea how many millions of babies were born into this world after their parents declared "I can't get pregnant, baby!"
Come to think of it, the World Herpes Association are similarly filled with those gullible condom-haters.
(For the record, I have no idea that such an organization exists. If you decide to bypass our advice and start banging and squirting those gallons of sperm everywhere, you might have the opportunity of being the founding member).

No you should not believe her. Even if a doctor has told her she is infertile or will struggle to get pregnant ever again, there is always a chance, no matter how small, that she still could get pregnant. You hear all the time about women who have been told they are infertile by a doctor and then a couple of years later, a miracle happens and they get pregnant!
So never trust that she cant get pregnant - unless she has actually been sterlized by a doctor (the medical process for a woman so she can never have another baby, like a man having a vasectomy) then do not trust what she says.
If you dont want a baby then you have to use condoms - simple as that. If condoms really are such a problem then ask her to go onto birth control, that way you will be certain you are safe. But realistically you should be using condoms anyway to prevent STD's - she clearly has had sex with other partners before so you cant be sure that she doesnt have a STD, and it is not worth risking your health just for sex.
I hope this helps and good luck!

Unless you have a doctor show you medical scannings revealing that she does not have a uterus anymore, then I would not take the chance at all. It seems like you have no intention of having a child with her, so don't allow the possibility of that happening.
Please, use protection.
