Start with a simple hello and a chat during your lunch break. Allow the chat to move into stuff you like to do and then ask her what she likes to do. Of it may take time for her to feel comfortable chatting with you but if she really likes you, then you will have opened an avenue to study her and for her to study you. Start by becoming her friend first before you ask her out. Be patient and don't come on too strong.

 How do you mean you work in the back of the 'house' and her in the front?! Have you spoken to her a lot? If you have spoken heaps, and you get along well, and she's receptive to talking to you, it's a lot easier to ask her if she fancies coming for a drink after work than going all out and telling her that you love her..! You might frighten her off!
Find out what she likes to do, the more effort you make in discovering what she enjoys after work, the more she'll be flattered that you went to the effort (if of course, she likes you in THAT way...!).
