Honestly, it may have been something you ate or even an emotional response and it may have been his semen, if you swallowed.
Oddly enough, however, I'm allergic to a particular food and, if my man eats it with 24 hours of my swallowing, I become nauseated. Weird, but true.
That back-of-the-throat thing should be a worry.

 If it was related to giving him head, the reaction should have been immediate, like a reflex. Haven't heard about a delayed reaction like this. Never happened to me either, and I've given a lot of head over the years.
