I guess it depends if the man is shy or upfront and confident.
Some men may be shy and try not to hug you back too much as it may feel that they are giving themselves away to you that they fancy you...remember not all men want a girl to know that they fancy them...hence being shy.
The confident ones may -- or probably *will* chance the hair smell and generally be more "firm" with the hug, hoping to make the most on the moment of "relaxed intimacy"...and if you use fragrant shampoo they may give themselves away as your hair may smell so good that they may just keep on smelling & smelling!

Oops! I need to clarify that, where I live, you usually kiss a woman in the cheek when you say hello. Hugs are given only rarely. So, in our eyes, a hug says a lot more than a kiss.

In my opinion, the way to really know is not that much how a man will hug you, but whether he will do it, and then for how long. But be warned because sometimes you very much like a friend and hug her tight and long. Also, pay attention to the sort of relationship you have with him. If there would be no real need for the hug, but he hugs you, then, no matter how he does it, there's something going on.
