The uncertainty and novelty are part of it as well. That goes away with intimacy and familiarity. I think it's atypical for a couple to experience butterflies whenever they see each other for the rest of their lives. So, for what it's worth, you are completely normal.

I always think that butterflies represent the initial 'lust/in love stage'. They're always a useful indication of whether there's a connection, or whether there's not. They represent the initial excitement of a new relationship, the fun of dating again.
What they don't represent is true love, respect or anything like that. And that's why it's always good the the butterflies run out. Because, what really counts is what you feel after this initial butterfly stage.
Good news - you still like him. So you seem to be progressing well. Leave the butterflies in the past and continue to move forward with this guy.
