For time to time, I noticed her mom looking over at me the same way her daughter does. For some reason, this mostly happened when her mom wasn't even talking to me. She didn't do this to anybody else that night, not even her son.Besides staring at me, her daughter also shows me signs such as mimicking me, asking people she knows questions about me, showing concern for me if she thinks I’m in trouble (like when I have a bad cough), her friends act differently around me, she sometimes blushes around me, etc. Anyway, I know for sure that her mom is happily married and doesn't feel the same way about me that her daughter does. So, why did she do this?

It seems like, possibly, your crush could have the same feelings for you and her mother knows about this.
Her mother is probably staring at you because she sees you as the perfect gentleman for her daughter.
This all adds up. Try making a move =).
Good luck to you.
