 Personally, I'd just be flattered by the fact that someone was organising something for me and hadn't just left the decision down to me! I would love it if I was surprised with something cool and active like a salsa dancing lesson or ice skating or maybe a trip to the theatre or to a great gig if that is what she's into? Try to think about what she might organise for the both of you to do if she was given the chance - she'll love the fact that you thought about it and organised it without having to consult her! And flowers always go down well.... always.... no matter how cheesy they are ;) Ooo she's lucky - I'm excited for you! :)

It depends on the girl. No offense to what pancakes rule said, but I find that way too cheesy. However, I know a lot of girls would go for it--and if your girlfriend is the type then that would definitely work for her.
I think for the most part, any girl likes surprises. So if you surprise her by taking her after dinner to her favorite viewing spot with some drinks and dessert, then yeah that's good too. What I've always hated is, "What do you want to do?" "What do you want for Valentine's Day?" "What do you want to eat?" Just take the initiative and plan the night out and make sure it's things that SHE would like. I'm flattered and pleasantly surprised when a guy knows and has paid attention to what I like and surprises me with it. I like that the most.

 taking her to her favourite restaruant is quite nice. collect her from home with a bunch of flowers and some choclate. Have a suprise in the bedroom of champagne and strawberies and rose petals on the bed, do you have a song? if so, work it into the night somehow eg violinist in the restaraunt if there is one, if you go dancing, see if you can request it...As for sex, do anything that she wants, ask her to guide you. Scour the internet to find things that the large majority of women like but you have not tried.Essentialy, I don't know your girlfriend and can't tell you what she, personally, will love.
