Um you could give her something that reminds her of the time both of you spent together, like a scrapbook (if you're creative and don't think it's too girly). But your question probably was about what you should do together before she leaves... Spend a lot of time together, have a romantic picnic, or whatever you like to do, make her forget you are bound to time. A few catchphrases you could try insterting into your conversations:
I will travel a thousand miles to be with you.
I do not want to wake up from this wonderful dream with you.

Life without you will be like going to sleep and never having sweet dreams.
