I am slowly coming to terms with this, but I am still very much in love with her. I have deleted/thrown away everything about her, but I still have her number in my phone, and I still have her as a friend on facebook. Deleting her on facebook is the last thing I want to do, as I am holding onto the hope that she may want me back and I do want to stay friends, but I know that it is a large step in getting over someone. I also know that it would be extremely helpful for me to cut contact, as I am always checking her profile. So, should I cut contact or not?

If you value your happiness (and hers as well) then cut contact.

No. Delete her number and Facebook, and don't ever befriend her or call her or whatever. She has said she doesn't want you. Anything you do that goes against that wish is inappropriate.
Besides, there is this one lesson that is very difficult but very good to learn: you must not try to be where you're not wanted. It's not fair to yourself.
