Everyone keeps telling me to ignore her because she'll give up eventually but how can I ignore 80 texts a day? And I can't get a new number because my parents didn't know I was dating her and they would start asking questions. What should I do? Any help would be amazing, thank you.

But I will give it a go and hope for the best, thank you for the advice :)

i have had the same problem witha ex boyfriend text her just one simple text something like i am not interested in you stop stalking me. and if she does not stop you will have only one option go to the police and tell them your ex girlfriend is hassling you keep all the texts and calls that she has made that is what i got told by the police they will then go around and have a word with her ans she should hopefully stop hassling you and get the msg

Yeah, i would just send one text. Make it quite clear that you're really not interested in continuing to be in contact with her and to stop.
If she continues to text, i would then give her one more warning. Say if she does not stop you will go to the police.
If she continues after that, you really have no other option then to go to the police.
Good luck.

In the meantime, can you set up your texts so texts from her go in a folder or something separate from others? I do that with my GF so I can have all her texts in one place.
In this case though you would be doing it so you can "semi-block" her and at least not have her messages mix up with your others.
