Do you know why she hates your Mum? Has your Mum offended her in some way, or is your girlfriend perhaps linking with feelings/perceptions from the past and reacting as if the same thing is happening now? (Perhaps she has experienced offensive behaviour from other partners' parents, or even her own?).
In any case it is important that you discuss it calmly so that it can be sorted out. Try letting each other talk without interruption, taking turns. If this is too difficult, each of you writing a letter to express how you feel can be useful (and it never does any harm to include a chocolate or some other little treat with the letter, to show that you care).

I had a relationship quite like yours once.
It took me two full miserable years of my life to understand the following:
1) Family
2) Friends
3) Girlfriend
Number three becomes number one if all goes well. If not....then let it be....
A girlfriend will never beat your friends or family.
Think about it: The people that are there for you when things go wrong are your friends and family.
Good luck!
