You can get a circumcision, or in the shower, practice pulling it back a little further every day. It will hurt, but in 6 months or so it will be fine. After a year, it should be all good. Time is the key here, but just keep doing it every day in the shower
You'll probably have lots of smegma under there, so it's very important to clean this all away until you only see skin colour.

 I can't say for sure, but you should have this looked at by a doctor. A tight foreskin like yours could be a breeding ground for bacteria if you can't pull the foreskin back enough to wash the area properly. In this case I think the smell and taste might make performing oral on you an unpleasant experience for your girlfriend.
