Get a fertility monitor and use it.

I got married this year and ask my doctor this for when my husband and I want to have children. He told me that it varies and you could get pregnant right away. He told me that when we decide to have kids that I need to go off the pill and use another form of protection such as a condom until I am able to have two full regular periods off of the pill. It is taking a big risk that you will miscarry if you get pregnant before you are able to do this.

This is a difficult answer - because there is no conclusive evidence to show how long it can / will take.
It is different for everybody. I know people who have tried for 6 years before falling pregnant after coming off the pill, and i also know people who fell pregnant after the first month.
Some tips i can give is:
Up your folic acid intake (get a supplement)
Watch your diet, and eat healthily, and relax often
Exercise at least twice a week.
Try not to stress about anything. My gynea once told me that people should not get worried before a year of trying to fall pregnant. I know this is a long wait, but nature has its own time. If you still have your doubts, then best you consult your doctor.
Good luck.

It can take up to six months for your body to fully adjust to coming off the pill and you can expect it to take a full year to get pregnant after that so I don't think you need to be worrying quite yet.

Since you can accidentally get pregnant while ON the pill, if you miss a pill during the cycle, I can't imagine that it takes very long at all.
But everyone is different, and stress can affect your cycle. You should count the first day of your period as day one. To get pregnant, have sex on day 12, 14 and 16 (with 14 being your most fertile day). This assumes a regular cycle. Skipping the odd days gives him a chance to "reload" (build up more sperm).
If your cycle is irregular, there are other ways of testing when you're ovulating. One is to take your temperature every a.m. before you get out of bed and write it down. You'll have a slight increase in temp. when you're ovulating. I would do some internet search for the exact amount before trying this one. You would save sex for the day when you're ovulating, then both of you take the day off and have fun in bed.
For right now, you should relax and don't stress. I know you've heard that there are a lot of couples who decided to adopt, only to become pregnant. Taking the pressure off will help a lot.
Depending on your age, they won't even see you for "infertility" until you've been trying for a year (6 months if you're older than 35), so just keep trying. You're probably just stressed.
Good luck!
