I'm sure she'll be fine about it. But I agree with tasteofindia, take your mom on a day out, shopping, movie, dinner and sit down and just tell her you've met some one and its getting serious.
Then if she's happy suggest that everyone meets up for a meal/pizza or something - nothing to formal but more casual as its much easier to chat and have fun that way...

Hello there,
I told my mum about my first BF while on a "Girly day out", it makes things a lot easier that your mum can also be your friend (She'll feel a lot more appreciated - trust me) After a bit of girly bonding I told her that I was seeing a really special someone over a coffee, I know my mum appreciated the more open adult relationship approach.
As India said, if you are happy and excited about it, your mum will be too (and get all giggly)!

Make a hot date for you and your mother. Go out to the movies and dinner (it's always nice to spend some nice time with your Mom anyways). Then, over dinner tell her that you're seeing someone and it's getting serious.
Be excited about it! If you're excited about it, she will be too. If you're smiling and happy about it, she should be happy with you!
