You know when you like somene more than you thought you did when you start to miss them when you're not with them, even if it's only for a couple of days. You'll start to really treasure the moments you spend together, and you'll want to be with them almost all the time. If you really hate it when you have to say goodbye at the end of the day, or have to stop texting them through lack of credit, that's when you know you like them more than you would a friend.
