Since then I returned home after visiting her and we texted a lot - he was quite flirty and invited me on a date when I next visited my friend. I have now been over for the weekend and on the first night there we ended up kissing in his room and fell asleep together (nothing sexual happened). He woke up in the morning and was fine with me but he had to go as he had a meet up for his sailing club. Since then he has acted awkward with me and mentioned nothing of the date we had talked about previously. What is going on in his mind? Why is he being so awkward?

Who's to say? It doesn't seem like you guys are in too deep so just go on about your business. He'll mention it if he's serious and still wants to go on a date.

My guess would be he's embarassed somehow and feels awkward about talking to you about the "did nothing' sleep over. Not to worry, if there's the flicker of a flame there he'll come around.
