“They have a lot on their mind”translates "quit bugging me"

It's the nicest way she can think of to say "I'm sorry, but we don't really match in ways that are important to me". She's not interested in continuing dating, but she doesn't want to hurt your feelings, either.
Bear in mind that she's only one person of millions of potential partners, so accept that she wasn't the right one for you and move on.
