I think a lot of men chose to wait, but it isn't necessarily a casual sex vs. relationship scenario. Sometimes men and women get caught up in their careers/life goals and would rather fulfill those dreams before thinking about starting up a family.

You cannot generalise like that. Not all men are souless morons who don't realise the benefits of a relationship versus casual sex.
It takes some men longer then others to see it. Some never do. But most men eventually do.
One way to think is... if a guy is flirting in a nightclub and dry-humping on the dance floor, then chances are he hasn;t figured it out yet.
If a guy is sitting and having a laugh with his mates at a bar, flirting with, but not sleazing himself towards, anyone who cares to talk to him and he seems both interested in your looks as well as in the things you are saying to him, then chances are he's young and knows how to have a good time but knows how much better a relationship can be.
