 First off, how long have you been dating/together? That usually plays a big role into the situation. Most guys don't like the say those things to early in the relationship, for being scared you'll be creeped out and break it off. Also, (some) guys arent very emotional, they dont like to show or talk about how there feelings. If you want to know, hint on it. Maybe you'll find what your looking for (:
