He also told me a story about at the gym and I just replied "Sure, and his name" and he said I said it in a very nasty way. I feel like I'm walking on eggshells! Am I in the wrong?

I'm pretty certain that I would have had to have been there to call the gym story reply, but it is absolutely absurd for him to flip out at you for not wanting to hold his hand whilst driving. Has he not passed his driving test? You're supposed to have both your hands on the steering wheel at all time unless changing gears.
Yes, I know the majority of people don't drive this way, but when you are behind the steering wheel, driving safely comes before EVERYTHING ELSE.
In this case, I think he definitely over reacted, but if he's still sore about it, sit him down and try to explain that you just wanted to concentrate on the road more because you don't want to get into an accident risking both his & your life. Also, if you feel that he has been over reacting to a lot of other stuff then ask him what's wrong and why he's been acting that way. Remind him that you love him, and you want to help.
