ask her to clarify "might be going out with someone" and proceed accordingly
note, that if she's doing this to someone now, she may do it to you later on.

i think you should be more worried about the phrase "I might be seeing someone" one day she might tell a another guy that she "might" be seeing you. She is shady. I would have said either "I have started dating someone but am not exclusive yet" or "I am seeing someone and I'm sorry"

I wouldn't. I think that was her trying to be polite in declining your offer for a date. IF she was really interested she would have said YES to a date, not ... she might be seeing someone else.
I would look for someone else to get to know and date.
