For the same reason you wear makeup, heels, and a pushup bra, or shave your legs. First impressions are important, and men are largely convinced that they have to show that they are funny, confident, and experienced within the first 30 seconds of meeting a new girls.
Depending on the setting, a lot of them are right. I used to live in a town where the population was around 65% male, so it was true there - if you didn't make an impression quickly, you could be easily replaced. Better to make a bad impression than no impression at all.
Short of a vast cultural movement rewarding nice guys for acting shy, quiet, and boring, there is no way you'll ever stop this. However, you can get guys to act genuine more quickly by ackowledging and rewarding any of the behaviors you do like, Pavlov-style. Hug him, kiss him, pat him ont he chest, any physical indicator that what he did was good should do the trick and make him more comfortable with you.
