If this date is his idea, then you don't need to bring anything. Leave the planning to him. Now if it is yours, then bring a big blanket, a picnic basket with wine, fruit and cheeses.
I would look cute, yet not like you're trying to hard. You could wear a long maxi dress with your swimsuit underneath, in case he wants to take a dip. Or shorts with a nice peasant top, and flip flops to take off with ease if necessary. Think Boho chic.

I would wear a casual dress with a cardigan to put on in the evening. You will look pretty but not too smart, maybe wear with flip flops or flat sandals.
The beach hair look is a good one too - very natural and pretty.

Evening ideas, candles, beach blanket,ice bucket chilled (pop):)mixed fruit (to eat of course), music. Watch the stars.
Personally I would watch the golden oldie movie 'From here to eternity' (great beach scene)but before We went to the beach.
oK it's ancient and black and white but very romantic under the stars.
I did the movie when i was younger 19 at my boyfriends suggestion, the film was not boring, it was worth an oscar :)
