I finally told myself to move on, and leave the ex alone, and surprise! I met someone. We went to a wine bar, had a few glasses, and then back to my place, where we just hung out and watched a movie (more talking than watching). We didn't hook up, I don't want that, but did get close, cuddling, holding hands, ect... later she texted me, said that she wants to see me again, and that she will cook dinner for me sometime next week. I plan on calling her in a few days to take her out on date number 2, but I don't know what to do, I can't think of anything fun, that seems worth doing, so I leave it up to all of you who have been here for me when times weren't so interesting! What should I do for date number 2 (assuming she goes, haha).??

Okay, this may sound really dorky but what the heck. You went to a wine bar for your first date? How about you extend the theme and go to a winery with a picnic lunch? Buy a bottle of wine and sit out in the vineyard with a nice blanket and some good cheeses and bread and fruit like strawberries and grapes.
Bring hiking shoes and a backpack and walk a trail with a gourmet picnic. Bring a camera and some naturalist type gear like a magnifying glass, notepads for sketching and some sample bottles.
Go to a park or a canal and rent a canoe, if you have any athletic inclinations, again with the picnic lunch.
You could ask her to create the picnic and you arrange the rest.
There's all kinds of theater productions out there in most towns; it might be not Broadway-quality but it could be good fun.
Go on appetizer-crawl. Instead of doing shots or drinking beers like a pub-crawl at each one, order an appetizer, then go on to the next restaurant. You won't need to make reservations at a fancy restaurant and you'll have fun seeing how each one manages the order. Squeeze into the bar and order there, so you don't have to sit down.
Find a jazz place or somewhere dark and romantic where you can listen to music and hold hands under the table.

Maybe you should see about her doing that cooking since she's already suggested that? You could say that you'll take her out to see a film or something, and then she can cook? Seems to me like she's made it pretty clear that she likes you.
