Girl talk, girl time, it's when two or more women get together and gab and talk about every and any thing.
It's mandatory in my life and I have dinner with girlfriends a couple of times a month without our spouses.... and yes we talk about them, but we talk about work and shopping, and TV and news...
having girl talk is not replacing a boyfriend, it's just part of life...

Dear OP,
Girls talk is just what we girls talk about when we're on our own :) We talk about our personal lives, little worries, our bodies, boyfriends, other girls, tv series we like, fashion, clothes, some funny stories or some sad ones that happened to us, school, work.. as honeypie said, for us girls, no topic is too small to be discussed and shared. Boys tend to sum it all up a little more and don't seem to have the patience to listen to all of this.
It's nothing in particular it's just more relaxed sometimes because there's no chemistry involved.
When I'm around my female friends, we're so close to each other that I can talk about stuff that would be too embarrassing to share with a guy I only know for two months. For example, painful period cramps. Would you really want to know about that?

Girl talk is a LOT of talk about random subjects. A possibility to vent little stuff that YOU as her BF might rather want to roll your eyes at but a close GF will listen, comment and give advice of.
You two have only been dating 2 months so she isn't wanting to "over-share" with you, yet. It might come, it might be that she will continue to vent with her female friends.
Personally, I think it's a good think that she HAS good GFs that she can have girl-talks WITH. WE all need those.
