However, I don't know what to get him if anything - it's not like I've been with him long enough to buy anything outrageously soppy (not my style anyway) and I don't particularly want to get the usual crap if you know what I mean... He's a guy, OP we don't do Valentines gifts, we give them. Look at the list of all the traditional gifts. Chocolates, flowers, teddy bears they're all for women. Valentines is for women not men. We just use it to impress women who are easily impressed by mundane gifts on a holiday that reminds us how buying shit is still the best way to woman's heart.
V-day is for my wife. A day she gets treated like a princess, all I require from her in return is that she feels special.
Just get him a funny card. The best I got was "congratulations on becoming a dad", for one brief moment I was hit by a wave of terror until I saw she couldn't contain her laughter. OP cutesy shit is definitely a no-no.

I would keep it VERY VERY VERY low key... a funny card and maybe a small box of candy that you know he likes... NOTHING big, nothing "serious". KEEP it light, fun... casual.
Cologne is too personal for a 3rd date valentine...

Hi, not sure what your budget is but generally a perfume is a lovely gift for a guy. If all else fails, that's what I get.
If you have a limited budget , then chocolates like Ferrero will do.
