I don't really know what attracts me, i like to think its mainly the maturity (which actually none of the older men who go for an 18 year old really have) but actually I like a more detailed face with crows feet and grey hair!

I suspect you're not seeking a partner or an equal, but someone you think has the confidence, maturity and resources to take care of you. At least at this stage of your life. An older man is more likely to possess those qualities than is a younger man, hence your preference.
Such a man, who has has been married and had children, is more likely to be fatherly toward you than is a man your own age.

 To say fetish implies that it is unhealthy or compulsive. Such attraction as you say is not unhealthy and not all that uncommon for someone your age. If you can describe what qualities attract you to older men we can explore this a little more and perhaps you may get a little more understanding on if you think it is healthy or not.
