If you really want to take a leap of faith, ask her to go to the banquet WITH you, it will show you're serious and not just interested in fooling around.

Ask her to dance first and see how she reacts. Save asking her out til the end of the night but not right at the end when everyone is leaving. Just go up and start talking to her, she's interested already so it should flow smoothly. Dress up and be confident then everything should come easily. By the sounds of things she will probably be waiting for you to approach her so don't worry about it. Walk up say hi, how's it going, would you like to dance and then spend time with her.
