Long delay in reply to texts

A male United States age , anonymous writes:

I ran into an old friend I knew when she was married. She is now divorced for a few years. We went on a hike with a group and hit it off. I never got her number but she asked a mutual friend to give me her number. so I contacted her after a few days and suggested we go on another hike. She said, she'd like that. Every time I send her a text to touch base, it takes a long time for her respond, sometimes a whole day. I never send her another text until she responds to the last one I sent because I don't want to come on strong or appear too eager. So I don't know if she has lost interest now that a week is past since we went for a hike? She has yet to give me a date for our next outing and I am not bringing that up again.

Should I just give up and chuck it up as she not being interested? She is in her 40s and I'm in my 50s.
