I think if she was interested she would still be replying to be honest mate. She may of just been being polite.

Still waiting on a reply so not sure how long I should wait to text her back. Definitely straight to the point is the best route I imagine, just ask her out I think.

You need to suggest a date - something she might like - not necessarily something you would like. Faint heart never won fair lady.
If she isn't interested she will make an excuse. If she is interested but busy she will say something encouraging. And she might just say yes, why not?
However assuming you go on a date then that is only the start. You must keep trying your best to show her you care. Old fashioned manners never go amiss.
