But we were sitting beside each other and i was touching her too so it wasn't really possible for her to use both hands. This time I didn't even get as close but I suspect that's because she was unable to focus on what she was doing and I was more focused on what i was doing than how it felt.
FYI - She doesn't want to give oral. So unless you have any suggestions about how i could convince her that's not gonna happen.

I do both with my boyfriend, I use my hand while performing oral sex. He loves it.
Maybe also tell her to relax a bit? Like, maybe try to get into it more (that way she doesn't get tired?). I think after she makes you orgasm and sees what she is capable of doing she'll enjoy it a lot more and not get so tired.
