I keep thinking why not but then another part of me thinks that it just being "easy" and I wont hear from him again. Should I tell him how I feel, and risk being blown out.

Definitly tell him. You totally fancy him, and he has said he doens't want a relationship. Which means that he will use you for sex then leave you behind to nurse a broken heart. Explain you don't do sex unless there is something meaningful in it. Don't allow yourself to be used.
