When I sent my current SO her first birthday card - about 6 months after we'd started dating - I wrote:
"Since I've been seeing you, my life hasn't been NEARLY as crappy as it used to be....."
She was impressed. You may "borrow" that text, if you'd like...

 Close your eyes and think on all the things you love about her - Think about how those things make you feel - Think about how you felt the first time you saw her, held her hand, kissed her, made love to her (if you've done that)- Then let all those thoughts of happiness flow from your head to your pen.
No one else can really put your feelings into words for you, because only you know exactly how she makes you feel.
