I think that honesty would be the best policy here. Why dont you just tell her that you just came out to your family and that your nerves are a little frazzled right now. Also tell her that you are attracted to her and that your behavior wasnt meant to be rude. She will probably be understanding and respect your courage.

I think you should at least text her and tell her you would like to go out with her. Maybe a phone call instead. Appologise for running off on her cause you got nervous. Or she might think you aren't interested.
Nerves are a nightmare but the only way to beat them is to face them. Swallow them down and go out on this date. You only live once and you don't want to regret not going out with this girl right?! Once you are out with her and the conversation is flowing then you should relax and not be so nervous.
