Well just tell him what you told us.
Have you asked him exactly what time it says it was sent? I do also think he should show you exactly what was said in the text message.
Maybe someone could have used your phone when you were at work and went to the photocopier, or in a bar, when you went to the ladies, or something? If so, you need to pinpoint which one of your colleagues did this.
If you are sure that NO ONE could have sent it, then since it was a rude text (which counts as offensive) and appeared to come from your phone and you didn't send it, I think you should be able to contact your phone provider and tell them, and have it checked out and find out what could have happened.
I think you should tell your boyfriend that you take this kind of thing very seriously and you need to see it and the time of it in order to report it, as you find it distressing to think that an offensive text could be made to look as if it came from you.

Take care

I think he could be testing you. Just be honest with him, and let him know that you have no idea whats happening, and that he has to trust you.

Technically it's possible to send a text through certain internet services and make it appear as if it was sent from somebody else's phone number. See for example http://thesmszone.com/ where it says "You have the power to specify what the receiver will think the message is from. You can put ANY mobile number or alphanumeric character in the "From" field when sending a message."
