reader, anonymous, writes (24 January 2012): It's lovely that you are putting so much thought and research into wording your "Thank You's".
Be yourself and genuine, which is always best. Mention how generous they really were, how grateful you are and what you plan to use it for. Whether it's being used for something special or specific, or towards your education, or saving it for something bigger in the future. They will be glad to know how much you appreciate it, that you are responsible with it and that they contributed towards something special for you.
Something like:
"Dear ____
Thank you so very much for your generous Christmas gift, it means so much to me because now I'm going to buy that _________ item I've had my eye on for a long time/my tuition/saving towards an apartment/car. I will be thinking of you when I get it, thank you so much once again!
Love ____"

Have a look online for 'thank you poems' maybe. There are lots of ways to say thank you. Maybe tell them what you plan to use the money for, then once you have achieved it, give them an update. E.g. If you want the money to buy a car, send them a photo of yourself with the car once you have bought it!
Have a search on the web, there are plenty of ideas out there for you to make these thank you's special for your family :)
