 As a woman, I can tell you that some chicks will never come out and say, "yes, I believe you. I am beautiful!". The best thing that you can do is just keep showing her how beautiful you think she is and telling her how pretty she looks in that shirt, that he hair looks nice, you know - the compliments you would normally give her. Eventually it'll just sink into her and she'll just feel that you think she's the most beautiful girl in the world.
I used to be just like this. But, my fella (now husband) was/is really good at doing this. He never expected me to agree with him (e.g. "yeah, I am as hot as you say I am"), he just would tell me I'm beautiful without expectations. At first I was a little argumentative, but then it just sunk in and now I have the confidence of a woman who is completely positive that her man finds her to be the sexiest woman around.
Don't stop and just keep appreciating her beauty and being the great guy you are to her. Even if she doesn't act like it - it doesn't go unnoticed. You sound super sweet, she's lucky to have you!!

 This is exactly what I do when someone I care about says that to me!! I know why I do it, too, so maybe it's the same with her. I want my boyfriends to like me for me. I don't want someone to be with me because of the way I look so I blow the compliments off. But don't ever stop complimenting her. She may be just trying to find out if you're sincere. Eventually she'll acknowledge them and believe me it is appreciated!!
