I agree with Doe Eyed Beauty.....You don't have to tell her that you think of her like a second mother. Try using different words to express your fondness of her. Simply tell her thank you for being a great teacher. That will get the message across.

I think that you need to try and let this go, even though I am sure she would be very flattered by how you feel it would be putting her in an awkward position. Her job is to teach you and guide you in to your future and that is all. After school you will have no more contact with her. It is part of the process of growing up and it is great that you are so fond of her and you feel this bond, but at the end of the day you are one of her many students and that is not going to change. I think you just need to keep going on with your school work and not mention this to her. Just look at her for what she is your teacher and nothing else.
