I left and rang her in a hour, she told me that I was cheating on her, while I was cheating she read all my texts, which two were ladys. One girl is a friend of the family's. The other is my councillor that is married and she also councils my sister. How can I prove I'm not messing around?

Assuming that the texts were innocent in nature, then there's no way to prove you're not cheating because logic is irrelevant to this woman.

You cannot prove a negative to a loony-tune. You are entitled to your friends, and if some are female, well then, some are female. You were dating a loony-tune. Delete her number, ignore any messages and count your blessings.
Be very thankful this only lasted one month and move on!

After only one month of dating, this lunatic has already gone through your phone, turfed you out of her home and leveled baseless accusations. Her behaviour was outrageous. She's an unstable, boorish woman with a ton of old baggage.
I'd say you dodged a bullet here and you should count your blessings and don't look back.
