Adoration is quite a strong thing, however it is different than love. I think he is developing feelings for you, however because of how you've talked about valuing your freedom, I think he may be being cautious about throwing around the L word.
"I love you" is the stronger phrase in my opinion, but I think he may be using "adore" instead so that you don't get scared.
If he were going to comment on the sex, he would comment on the sex. Saying something about you means it was about you.
