With the greatest of respect, I wouldn't entertain her thoughts with a card at all. I think there is a chance that she might find it patronising. More importantly, I think it'll just add to her problems with this issue, and may well make her very unstable as that particular time comes.
I think you'd do better to not have anything to do with this particular mindset of hers. It could make things worse, and when that date passes and we're all still here (as we will be), she'll look back and not be happy she bought into 2012 in the first place.

If your GF believes this story that has been going around for decades, then you might want to concider finding a new GF.....
There is so many stories over the years, so many different years as to when the world is going to end, its ridculas. but if you really MUST send a card put im yours untill 2012 , see you on the other side. if not nice knowing you lol
