Not that long ago my bf's catholic grandmother walked in on us. We never discussed it and we all just acted like nothing had happened after. It just went away. I'm sure she knows at his age he is having sex! It's embarrassing, but I really don't think it will affect anything.

My mother walked in on my at 16 having sex with my boyfriend.
she said "oh excuse me" and walked out and shut the door.
we never discussed it again... EVER.
she won't be disgusted or embarrassed if she's aware that her grown son is capable of having an adult relationship.

The fact is it's happened and you have to get on with it.
No-one likes to be heard or even caught in the act by their or their partner's families but you're not the only couple it's happened to and won't be the last.
Personally, unless his mum says something, I wouldn't say anything.
If hearing you two at it is an issue for her then she will raise it.

My mother caught a g/f and me naked once -- I think I too was around 21. My mother later asked me to make sure I told the g/f that Mom didn't think any less of her and that everything was OK. I was impressed how she handled the situation!
Particularly if your b/f isn't the oldest child she knows that stuff is going on; while parents certainly don't want to be confronted with it, it's not the end of the world.
