He just broke off a 4 year relationship(engaged for a year) back in August and he is super sweet, askes me all sorts of questions, but he really likes affection always likes to hold hands, cuddling that kind of stuff which I mean is great totally but I don't want to jump into something that might end badly because he is just trying to replace his ex. Any suggestions on how I can tell?

Just take it slow with him. Clearly if he tries to get into bed with you too quickly he's not worth the time. But let him get to know you, and you get to know him and see where it leads.
