If it's like water, it could just be pre-cum. Pre-cum acts like a lubricant to help with penetration.

Semen IS different from man to man, and sometimes for the same man it can be different depending on his diet and how long it has been since he last ejaculated.

From man to man, semen will often be different in color, consistency and taste. There is some evidence, and I can vow some personal input from girlfriends, that flavor, in particular, can be affected by diet. Your question is more about thickness and appearance, however. I think that you will find that those factors will vary from man to man and at different times. Sometimes, based on experience, ejaculate has varied from almost snow-white to pearl color, and from watery to like yogurt, or like a milkshake consistency.

"Discharge" that is not semen, is a sign of stds, but that is definitely different than semen. Just something to be aware of.
It sounds like your new guy has his unique style of semen that is just different than your ex's. No worries.
