I respect his character, and do not have him listed as my boyfriend on facebook. I simply have a blank for my relationship status.However, he has never changed his status from single. I ignored it at first and never mentioned it, but now I find it strange. How do I bring this up to him?

You can simply ask him, I'm sure he won't mind, as long as you ask him nicely and not like "WHYYY ARE YOU STILL LISTED AS SINGLE??" Lol, you know?
I'm sure it's just because he doesn't want people asking. If he's shy, it can be quite embarassing or something if people keep pestering you as to whom you're in a relationship with, because some people just won't leave it alone, they'll keep asking. People are curious by nature.
Like you said, he's a person who keeps his private life to himself, so probably doesn't want to broadcast his relationship status. It's not that he's ashamed of you or anything. Just ask him about it, and he'll assuage any worries or feelings of curiosity you have.
