 Because:
1. they are not yet sure it will lead to marriage.
2. They don't want to be "single" today, "in a relationship" tomorrow, "complicated" the next day,etc.
3. They still want to explore other options. After all, they can refer to their bf/gf as their relative/friend to a new love interest if asked about the pics they post online.

And because doing it or not doing it causes drama and "trauma", easier to avoid as much drama as possible.
And some people *gasp* likes to just keep some things PRIVATE.
Putting up a status doesn't make a relationship any better or more "real".
Again, it's JUST Facebook....

 A lot of people don't see it as anyone else's business. Do you walk down the street announcing "I'm in a relationship"?
It is actually very sad seeing relationships played out in the public arena on facebook. All these status updates on "x is now in a relationship with y" and then 3 weeks later "x is no longer in a relationship with y" or "its complicated". It is no ones business except theirs.
Why does it bother you OP that you don't know their relationship status?

 Some people can't be bothered filling in all their personal data into social networking sites. They're not trying to be difficult or confusing. They just don't see it as a priority.
