If you were talking about bicycle maintenance, and out of the blue, he asked the question “what does love mean for you?”... well, then he’s got something besides bicycles on his mind.
If you were talking about playing tennis, and he was a novice tennis player and asked the same question, well, then we have a different option.
If you were talking about dating, and romantic things in general, then there’s yet another possibility.
Is this a written conversation over text, a phone conversation or a conversation in person?
We’d need the context really, to be able to offer an opinion.
I’d say that the most natural way to respond to that question is to ask him why he asked that question.
If you’re doing a lot of texting and this in the middle of a text convo then reply, “why do you ask?”

Curiosity. Or to come off as a "deep thinker". Maybe you use the word LOVE a lot when you talk, so it goes back to curiosity.
I think it's east to give a general definition of love that more or less everyone can agree on, but a personal one might vary a bit.
I don't think there is a right or wrong answer that you can give to him or anyone else.
