I agree you are reading way too much into this.
he's a personal trainer.. it's his JOB to make you think he wants you to be with him.... he gets PAID for it.

I think you are reading to much in to him looking at you. You have managed to convince yourself that there is something going on between the both of you. He could be just one of those people who stare but mean nothing by it. His text message is simply telling you that he cannot make the appointment it is professional and apologetic which is completely the right way to go about it, so I guess if you are still wanting to take the class then tell him when you are free, however please do not expect to much from this.
