One of them I like a lot, we have been much more flirty with each other and he asked me on another date but it's not even set in stone. They always text me to ask how I'm doing, but then as soon I reply, and I ask a question like "how was your day?" or something, they disappear and don't reply. Only for the cycle to be repeated again later when they text me AGAIN like a week later. And I never reach out to them, I suppose for this reason. So, why do they do this? Are they scared, bored, want attention, what is it!?!? And should I just ignore them next time they reach out? (including the one I like)?

I'd ignore texts that are important texts like relationship issues such as asking for a date etc...
texts are not the way to have a relationship.

Texting is not really communicating. If the guy was interested, he'd call you and have a conversation with you or call you to ask you out. Here are the translations for texting...
"Hey, what have you been up to?" means..haven't heard from you in awhile, aren't you wondering about me or missing me? I'm kind of bored and was just reaching out.
Then you answer and are interested and might ask how they are.
no response means....good, you're still pining over me, just was curious. Think I'll text Tina now and see if she's still pining over me.
